Gujarati baingan bharta, or ringan nu oro, is rustic Kathiyawadi comfort born from fire and simplicity. Large purple eggplants roast slowly over open flames or hot coals until their skin chars and the flesh turns smoky-soft and creamy. Peeled and hand-mashed, the eggplant keeps its beautiful earthy smokiness without heavy spices—just green chillies, fresh ginger, coriander, and a touch of salt to let the natural sweetness shine.
Cooked quickly in hot groundnut oil with mustard seeds that pop and curry leaves that curl, it stays coarse and textured, often finished with raw spring onions or peanuts for gentle crunch. Served hot with thick bajra rotlas that tear and scoop up every smoky bite, alongside jaggery and masala chaas, it’s the taste of Gujarat’s villages—bold, honest, and deeply satisfying in its unpretentious warmth.
1) Add the contents of the packet into a bowl.
2) Remove the oxygen scavenger sachet used for freshness.DO NOT EAT IT!
3) Pour 250 ml boiling water, stir well, and cover for 7 minutes.
4) Remove the cover, stir again — and it's ready to eat!
